GLUTEN-FREE ASIAN CHICKEN LETTUCE WRAPS – November 25 – Gluten-Free Diet Awareness Month

Savory gluten-free Asian chicken lettuce wraps

This is a favorite at my house.  We like to make the Asian chicken lettuce wraps.  The fact that they are gluten-free allows us to invite our friends over with gluten allergies.

Instructions

  1. In a medium saucepan over medium-high heat add the peanut oil and chicken.  Cook until it is browned.  Add the red pepper and water chestnuts.  Reduce the heat to medium and cook for about 4-5 minutes, until the red pepper becomes soft.
  2. Meanwhile whisk the soy sauce, cornstarch, rice vinegar, sesame oil, honey, and peanut butter together. Place in a saucepan over medium-high heat.  When the soy sauce mixture has thickened, about 3-5 minutes, remove from the heat and add the ginger, onions, and garlic.
  3. When the chicken mixture is done remove from heat.  Add the soy sauce mixture and mix well.
  4. Lay the lettuce leaves on a serving dish and place the chicken mixture inside the lettuce and sprinkle with the peanuts.
  5. Serve with soy sauce or sweet chili sauce

Notes

Pre dice/chop/mince everything.  The prep time is as long as the cook time.

This is also tasty with ground pork.  Try both!
