SPAETZLE, SAUERKRAUT, AND BRATWURST CASSEROLE – October 6 – National German – American Day and National Noodle Day

Serves 4-6


  • 2 cups packaged spaetzle or use this recipe
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ½ yellow onion, chopped
  • 1 Gala apple, cored and chopped
  • 2 tablespoons brown sugar
  • 2 cups sauerkraut
  • 4 bratwurst links, sliced into ½ inch pieces.


Preheat oven to 350 degrees.  If using packaged spaetzle follow the package, otherwise make according to the recipe.  In a pan over medium heat add the olive oil and butter.  When the butter has melted add the onions and cook for 5 minutes.  Add the apple and brown sugar.  Cook until the apple is soft.  Add the sauerkraut, stir and cook for 5 minutes.  In a separate pan cook the bratwurst links until the center is no longer pink.  Poor the spaetzle in an ungreased 9×9-inch baking dish.  Add the sauerkraut mixture, then the bratwurst to the dish.  Bake in the oven until bubbling, about 12-15 minutes.
