BAKED APRICOT CHICKEN – March 19 – National Poultry Day

Serves 4

  • 12 Chicken thighs
  • 1 cup apricot preserves
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons water
  • 1 package dry onion soup mix

  1. Preheat oven to 350 degrees F.  
  2. In a medium bowl combine all ingredients and mix together.
  3. Place chicken in a baking dish.  Pour mixture over chicken and bake covered for 50 minutes.  Uncover and bake for 10 more minutes.
