ARTICHOKE CHICKEN – March 16 – National Artichoke Hearts Day

Serves 4

  • 1 15-ounce can artichoke hearts, drained and chopped
  • 1 cup grated Parmesan cheese
  • 1 cup mayonnaise
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • Cooking spray
  • 4 boneless skinless chicken breast halves

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a bowl add the artichoke hearts, Parmesan cheese, mayonnaise, garlic, salt, and pepper.  Mix well.
  3. Spray the cooking spray in an 8×8 inch glass pan.  Place the chicken in the glass pan and cover the chicken with the artichoke mixture.
  4. Bake until chicken is done, about 30 minutes.
