- Meat from ½ of a rotisserie chicken
- 2 stalks celery, chopped
- ¼ – ½ red onion, diced
- 1 green apple, cored and chopped
- 1/4 cup mayonnaise
- ¼ cup ranch dressing
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup cashews, chopped if used
- 12 croissants, sliced in half

- In a large bowl combine the chicken, or turkey, celery, onion, apple, mayonnaise, ranch dressing salt, and pepper. If needed add some additional mayonnaise and/or spices.
- Spread the chicken mixture and sprinkle cashews, if used, on the croissants and serve.
