CHICKEN CROISSANT SANDWICHES – January 30 – National Croissant Day

Serves 4-6

  • Meat from ½ of a rotisserie chicken
  • 2 stalks celery, chopped
  • ¼ – ½ red onion, diced
  • 1 green apple, cored and chopped
  • 1/4 cup mayonnaise
  • ¼ cup ranch dressing
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup cashews, chopped if used
  • 12 croissants, sliced in half

  1. In a large bowl combine the chicken, or turkey, celery, onion, apple, mayonnaise, ranch dressing salt, and pepper.  If needed add some additional mayonnaise and/or spices.
  2. Spread the chicken mixture and sprinkle cashews, if used, on the croissants and serve.
