- 8 oz of penne pasta
- 1 cup cooked chicken breast, cut into ½ inch pieces
- ½ cup seedless red grapes, quartered
- ¼ cup dried cranberries
- ½ cup plus ¼ cup salted cashews
- ½ cup ranch dressing
- Cook the penne pasta according to the directions on the package. Drain.
- In a large mixing bowl combine the pasta, chicken, grapes, cranberries, ½ cup cashews, ranch dressing.
- Serve and top with the remaining cashews
