Vegan Pie Crust

This is a vegan adaptation of my Grandma’s Pie Crust.

  • Yield: 2 Crusts each crust serves 8

Ingredients

  • 2 and 1/4 cups flour
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 cups solid Coconut oil
  • 2 tablespoons vinegar, lemon juice, or vodka
  • 1-2 tablespoons cold water (as needed)

Instructions

  1. Place 2 cups flour, salt, and sugar in a bowl and mix well.  In another bowl, mix the remaining ingredients.  Combine both mixtures adding the remaining flour or water as needed.  
  2. Transfer half of the dough to a floured surface.  Roll out to about 1/8″ thick.  Place in a glass pie pan.
  3. Repeat with the other half of the dough, or put in an airtight container and refrigerate.
  4. If baking on its own, preheat oven to 400 degrees Fahrenheit and bake, about 30 minutes until browned.
