Grandma’s Raisin Date Cookies

This is a family favorite.

Ingredients

Cookie:

  • 1 cup of sugar
  • 1/2 cup vegetable shortening plus additional to grease baking sheet
  • 1/2 cup sweet milk*
  • 1 egg
  • 3 1/2 cup flour
  • 3 tablespoons baking powder
  • Wax or parchment paper

* 2% milk

Filling:

  • 1 cup of water
  • 3/4 cup sugar
  • 1 cup chopped raisins and/or dates
  • 1 tablespoon flour

 

Instructions

Cookie:

  1. Cream sugar and shortening together.
  2. Add milk and egg, then dry ingredients.
  3. Mix well.
  4. Divide dough into 2″ wide logs, wrap in wax or parchment paper and refrigerate overnight.

Filling:

  1. In a medium saucepan over medium-high heat bring the water to a boil. 
  2. Add all of the other ingredients and cook until thickened.
  3. Remove from heat and let cool.
  4. Preheat oven to 375 degrees Fahrenheit. 
  5. Use additional vegetable shortening to grease baking sheet.
  6. Cut dough into 1/4″ slices and lay half of the slices on the baking sheet.
  7. Place 1 teaspoon of filling on each slice.
  8. Place another slice of dough on top and press edges with a fork.
  9. Bake for 15 minutes or until lightly browned.
