Grandma’s Raisin Date Cookies
This is a family favorite.
Ingredients
Cookie:
- 1 cup of sugar
- 1/2 cup vegetable shortening plus additional to grease baking sheet
- 1/2 cup sweet milk*
- 1 egg
- 3 1/2 cup flour
- 3 tablespoons baking powder
- Wax or parchment paper
* 2% milk
Filling:
- 1 cup of water
- 3/4 cup sugar
- 1 cup chopped raisins and/or dates
- 1 tablespoon flour
Instructions
Cookie:
- Cream sugar and shortening together.
- Add milk and egg, then dry ingredients.
- Mix well.
- Divide dough into 2″ wide logs, wrap in wax or parchment paper and refrigerate overnight.
Filling:
- In a medium saucepan over medium-high heat bring the water to a boil.
- Add all of the other ingredients and cook until thickened.
- Remove from heat and let cool.
- Preheat oven to 375 degrees Fahrenheit.
- Use additional vegetable shortening to grease baking sheet.
- Cut dough into 1/4″ slices and lay half of the slices on the baking sheet.
- Place 1 teaspoon of filling on each slice.
- Place another slice of dough on top and press edges with a fork.
- Bake for 15 minutes or until lightly browned.
