Grandma’s Raisin Cookies – April 30 –  National Raisin Day

Cookies:

  • 1 cup sugar
  • ½ cup vegetable shortening
  • 1 egg
  • ½ cup milk
  • 3 ½ cup flour
  • 3 tablespoons baking powder
  • Cooking spray

Filling:

  • 1 cup water
  • ¾ sugar
  • 1 cup chopped raisins
  • 1 tablespoon flour

Cookies:

  1. In a medium bowl add the sugar and shortening.  Add the egg, milk, flour and baking powder. Mix well
  2. Divide dough into 2” wide logs and chill overnight.

Filling:

  1. Add the water to a small saucepan over high heat and bring to a boil. Add the Sugar, raising, and flour.  Continue to cook until thickened, stirring as needed. Remove from heat and cool.
  2. Spray a cookie sheet with the cooking spray.  Cut the dough into ¼ inch thick slices. Place the slices on the baking sheet.  Place a teaspoon of the filling on the dough and place another slice of dough on top.  Using a fork press the edges.
  3. Preheat the oven to 375 degrees Fahrenheit.  Bake for 15 minutes or until lightly browned.
