Cookies:
- 1 cup sugar
- ½ cup vegetable shortening
- 1 egg
- ½ cup milk
- 3 ½ cup flour
- 3 tablespoons baking powder
- Cooking spray
Filling:
- 1 cup water
- ¾ sugar
- 1 cup chopped raisins
- 1 tablespoon flour

Cookies:
- In a medium bowl add the sugar and shortening. Add the egg, milk, flour and baking powder. Mix well
- Divide dough into 2” wide logs and chill overnight.
Filling:
- Add the water to a small saucepan over high heat and bring to a boil. Add the Sugar, raising, and flour. Continue to cook until thickened, stirring as needed. Remove from heat and cool.
- Spray a cookie sheet with the cooking spray. Cut the dough into ¼ inch thick slices. Place the slices on the baking sheet. Place a teaspoon of the filling on the dough and place another slice of dough on top. Using a fork press the edges.
- Preheat the oven to 375 degrees Fahrenheit. Bake for 15 minutes or until lightly browned.
