GRANDMA’S COFFEE CAKE – April 7 – National Coffee Cake Day

My grandma was a great baker but she didn’t use exact amounts of ingredients if it wasn’t necessary.  There were no amounts for the butter, raisins or nuts, cinnamon, or brown sugar (In fact butter wasn’t even in the ingredients).  This is to either taste or what you have on hand. Experiment with the coffee cake and have fun.

  • 1 cup vegetable shortening
  • 4 cups flour
  • 2 ¼ teaspoon yeast
  • 1 cup lukewarm milk
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 3 eggs beaten
  • Cooking spray
  • Butter, melted
  • Raisins or nuts
  • Cinnamon
  • Brown sugar

  1. In a medium bowl cut shortening into flour.
  2. In a large bowl dissolve yeast in milk.  Add sugar, salt, and eggs. Add the flour mixture and mix.
  3. Spray a large bowl with cooking spray and place the dough in the bowl and refrigerate covered overnight.
  4. Roll out like a jelly roll, spread with butter, sprinkle with nuts or raisins, brown sugar, and cinnamon.  Roll up starting with the long side.
  5. Preheat oven to 350 degrees Fahrenheit.
  6. Spray a cookie sheet with the cooking spray and place the dough on the sheet in a ring shape.
  7. Bake for 30-35 minutes.
