GRILLED HALIBUT WITH CHIA PESTO – March 23 – National Chia Day

Serves 4

Chia Pesto

  • 1/2 tablespoon chia seeds
  • 2 tablespoons water
  • 1/4 cup walnuts
  • 1/8 cup pine nuts
  • 1 cloves garlic minced
  • 2 cups chopped basil
  • 1 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1/3 cup olive oil

Halibut

  • 4 Halibut fillets, about 1/2 inch thick
  • 1 tablespoon olive oil

Chia Pesto

  1. In a medium bowl mix the chia seeds and water and let stand for 20-30 minutes.  
  2. Place the remaining ingredients and the chia seeds in a blender. Pulse until blended.  

Halibut

  1. Preheat grill on medium heat.  
  2. Brush the halibut with the olive oil and place skin side up on the grill.  Close the lid and grill for 4-6 minutes.
  3. Turn halibut over and cook until opaque, about 5-6 more minutes.  Remove from grill and let stand for 4 minutes.
  4. Put 1/4 of Chia Pesto over halibut and serve.
