Chia Pesto
- 1/2 tablespoon chia seeds
- 2 tablespoons water
- 1/4 cup walnuts
- 1/8 cup pine nuts
- 1 cloves garlic minced
- 2 cups chopped basil
- 1 teaspoons salt
- 1/4 teaspoon black pepper
- 1/3 cup olive oil
Halibut
- 4 Halibut fillets, about 1/2 inch thick
- 1 tablespoon olive oil

Chia Pesto
- In a medium bowl mix the chia seeds and water and let stand for 20-30 minutes.
- Place the remaining ingredients and the chia seeds in a blender. Pulse until blended.
Halibut
- Preheat grill on medium heat.
- Brush the halibut with the olive oil and place skin side up on the grill. Close the lid and grill for 4-6 minutes.
- Turn halibut over and cook until opaque, about 5-6 more minutes. Remove from grill and let stand for 4 minutes.
- Put 1/4 of Chia Pesto over halibut and serve.
