PORK TENDERLOINS WITH BANANA SAUCE AND CEREAL – March 7 – National Cereal Day

Pork

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ yellow onion, diced
  • 2 pork tenderloins, cut into 1-inch cubes
  • 1 cup chicken stalk

Banana sauce

  • 2 ripe bananas
  • ½ cup half-and-half
  • ½ cup crushed cinnamon flavored cereal

Serve

  • 2 cups wide egg noodles

Pork

  1. In a large skillet, over medium-high heat, add the olive oil, butter, salt, pepper, and yellow onion, and pork.  Stirring frequently, cook until the pork has been browned. Reduce the heat to medium and add the chicken stalk. Simmer for 5 minutes.

Banana sauce

  1. Place the bananas, half and half, and cinnamon cereal in a blender.  Blend until smooth.
  2. Pour the banana mixture into the skillet and bring to a boil, then reduce the heat but maintain the temperature to simmer.  Stir occasionally until the mixture thickens, about 5-10 minutes.

Serve

  1. Cook the egg noodles according to the package.  
  2. Plate the noodles and top with the pork and sauce.
