SAVORY POUND CAKE – March 4 – National Pound Cake Day

Serves 4-6

  • ⅓ cup zucchini, diced
  • ⅓ cup carrots, diced
  • ½ red onion, diced
  • 1 cup butter, room temperature
  • 6 eggs, room temperature
  • 1 ¼ cups flour
  • 2 teaspoon dried orange peel
  • 2 teaspoons dried lemon peel
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon tarragon
  • 1 cup ham, diced
  • Cooking spray

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place the zucchini, carrots, and onion in a microwave safe bowl and cover.  Cook for 2 minutes.
  3. In a large mixing bowl add the butter and eggs.  Beat until smooth.
  4. In a medium bowl add the flour, orange peel, lemon peel, baking powder, salt, pepper, garlic powder and tarragon.  Mix then slowly add to the butter mixture and mix until combined.  Add the vegetables and ham and fold in.
  5. Spray a loaf pan with the cooking spray then pour the batter into the pan.
  6. Bake until a knife can be inserted into the center and comes out clean, about 45-60 minutes.  Remove from oven and cool on a wire rack.
