- 2 pounds boneless country style pork ribs
- 1 teaspoon onion powder
- ½ teaspoon dried tarragon
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- ½ medium yellow onion cut into slices
- 1 red bell pepper seeded, quartered, and sliced into 2 inch slices
- 1 yellow bell pepper seeded, quartered, and sliced into 2 inch slices
- ½ cup chunky peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons orange juice
- 2 tablespoons honey
- ¼ teaspoon pepper
- ½ cup chicken broth
- Cooked rice

- Put the pork in the bottom of a slow cooker. Sprinkle the onion powder and tarragon over the pork.
- In a saucepan over medium heat add the oil and butter. When the butter has melted add the salt and onion. Cook until the onion starts to become translucent, about 5-8 minutes. Add the peppers and cook for 1-2 minutes.
- Meanwhile in a medium bowl add the peanut butter, soy sauce, orange juice, honey, black pepper, and chicken broth. Mix well. When the peppers have cooked for 2 minutes add the mixture to the saucepan and bring to a simmer, stirring occasionally. Then pour over the pork ribs.
- Cover the slow-cooker and turn on high for 4-6 hours, until the pork is tender and done.
- Serve with rice.
