Ingredients

 

  • 1 orange, zested

  • 1 orange, juiced (can be from the same orange)

  • 2 tablespoons orange marmalade

  • 3 tablespoons butter, melted

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon honey

  • 1 tablespoon soy sauce

  • 1 clove garlic plus 1 clove garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon thyme

  • ½ yellow onion sliced into 1 inch slices

  • 4 Cornish game hens, thawed in the refrigerator if frozen

  • ½ navel orange, cut into fourths

  • ½ lemon, cut into fourths

  • ½ medium red onion, cut into fourths

  • 4 sprigs fresh rosemary or thyme

  • 4 cloves garlic, whole

  • ¼ cup chicken broth

  • ½ cup dry white wine

  • 2 bay leaves

Instructions

 

  1. Preheat oven to 450 degrees Fahrenheit.

  2. In a small bowl add the orange zest, orange juice, marmalade, butter, Worcestershire sauce, honey, soy sauce, 1 clove minced garlic, salt, pepper, and thyme.  Mix well.

  3. Place the onion slices in the bottom of a large roasting pan.  Place the Cornish game hens on top. Rub the orange mixture on the Cornish game hens.

  4. Place an orange slice, lemon slice, red onion slice, 1 sprig rosemary or thyme, and 1 clove garlic in each Cornish game hen.

  5. Roast in the oven for 25 minutes.

  6. In a large bowl place 1 clove minced garlic, chicken broth, and wine.  Mix and pour into the bottom of the roasting pan and add the bay leaves.

  7. Reduce the oven to 350 degrees Fahrenheit and pour the broth mixture over the Cornish game hens.

  8. Continue roasting until the Cornish game hens are golden brown and the juices run clear, about 25-30 minutes.  Baste with pan juices every 10 minutes.

  9. Turn off the oven and transfer the Cornish game hens to an oven safe dish, pouring any cavity juices and the items you stuffed into it back into the roasting pan.  Place aluminum foil over the Cornish game hens and place back into the oven to keep warm.

  10. Pour the roasting pan liquid through a strainer to remove the onions and other large items.

  11. In a large pan over medium-high heat add the strained liquid and bring to a boil.  Boil until the liquid is reduced by at least half.

  12. Serve by placing a Cornish game hen on the plate and spoon the reduced pan liquids over the hens.
