MRS. GYER’S COOKIES (Oatmeal) – December 4 – National Cookie Day
This was my Grandma Merrell’s go to Oatmeal cookie recipe. Not sure who Mrs. Geyer is since my grandma has been gone for over 35 years. Most of the recipes in her recipe box were hers – this is one of a few exceptions. I hope you enjoy.

Ingredients
- 1 cup vegetable shortening
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 eggs, beaten
- 2 cups oatmeal (uncooked)
- 1 cup nuts
- 1 cup coconut
- 2 cups flour
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Cream shortening and sugar together
- Add salt, cinnamon, vanilla, and eggs. Mix well
- Add oatmeal, nuts, coconut, and flour. Mix together with a spoon
- Roll into 1 inch balls, place on a cookie sheet, flatten with a glass and bake for 10-12 minutes
