MRS. GYER’S COOKIES – December 4 – National Cookie Day

Ingredients

  • 1 cup vegetable shortening
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 eggs, beaten
  • 2 cups oatmeal (uncooked)
  • 1 cup nuts
  • 1 cup coconut
  • 2 cups flour

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Cream shortening and sugar together
  3. Add salt, cinnamon, vanilla, and eggs.  Mix well
  4. Add oatmeal, nuts, coconut, and flour.  Mix together with a spoon
  5. Roll into 1 inch balls, place on a cookie sheet, flatten with a glass and bake for 10-12 minutes

NOTE: This was my Grandma Merrell’s go to Oatmeal cookie recipe. Not sure who Mrs. Geyer is since my grandma has been gone for over 35 years. I hope you enjoy.
