CRUNCHY THAI CHICKEN SALAD WITH PEANUT DRESSING – September 13 – National Peanut Day

Serves 4

Ingredients:

Peanut Dressing:

  • ½ cup Greek Yogurt
  • ¼ cup lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 clove garlic, chopped
  • 1 tablespoon fresh ginger
  • 1 teaspoon salt

Salad:

  • 2 cup chicken breast, cooked and shredded
  • 2 cups shredded lettuce
  • 3 cups green or red cabbage
  • 2 carrots, diced
  • 1 English cucumber, or 2 regular cucumbers, seeded and sliced
  • 1 red pepper, sliced
  • 2 green onions, sliced
  • ¼ cup peanuts for garnish

Instructions:

Peanut dressing: combine all the ingredients in a food processor or blender and blend until smooth and creamy.

Salad: combine all ingredients in a bowl and toss.  Toss with dressing right before serving.
