Ingredients:
Peanut Dressing:
- ½ cup Greek Yogurt
- ¼ cup lime juice
- 1 tablespoon olive oil
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 clove garlic, chopped
- 1 tablespoon fresh ginger
- 1 teaspoon salt
Salad:
- 2 cup chicken breast, cooked and shredded
- 2 cups shredded lettuce
- 3 cups green or red cabbage
- 2 carrots, diced
- 1 English cucumber, or 2 regular cucumbers, seeded and sliced
- 1 red pepper, sliced
- 2 green onions, sliced
- ¼ cup peanuts for garnish
Instructions:
Peanut dressing: combine all the ingredients in a food processor or blender and blend until smooth and creamy.
Salad: combine all ingredients in a bowl and toss. Toss with dressing right before serving.
