GRANDMA’S CARROT PUDDING

GRANDMA’S CARROT PUDDING

Serves 8-12

This is a family Christmas Tradition.

NOTE: In our family, this is also called “Cup of everything”

  • 1 cup ground carrots
  • 1 cup ground potatoes
  • 1 cup brown sugar
  • 1 cup ground apples (optional)
  • 1 cup flour
  • 1 cup nuts
  • 2 cups raisins
  • ½ cup butter
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

  1. Mix all ingredients together.  Place in a tin pan.  Cover with aluminum foil and place in a pan with 2 inches of water.
  2. Place the pan on the stove and turn on high.  Once the water starts to boil turn to low and cook for 2 and a half hours to 3 and a half hours.  Until the mixture is “set” in the center.  Cool and serve with whipping cream and/or lemon syrup, recipe here.
