CHICKEN CASHEW PASTA – November 23 – National Cashew Day and National Eat a Cranberry Day

Serves 4


  • 8 oz of penne pasta
  • 1 cup cooked chicken breast, cut into ½ inch pieces
  • ½ cup seedless red grapes, quartered
  • ¼ cup dried cranberries
  • ½ cup plus ¼ cup salted cashews
  • ½ cup ranch dressing


  1. Cook the penne pasta according to the directions on the package.  Drain.
  2. In a large mixing bowl combine the pasta, chicken, grapes, cranberries, ½ cup cashews, ranch dressing.
  3. Serve and top with the remaining cashews

Tomorrow is National Sardines Day.  Tomorrow’s recipe will include sardines.
