THAI OATMEAL CURRY – October 29 – National Oatmeal Day

Serves 4


  • 2 cups oats
  • 2 cans coconut milk
  • ½ teaspoon salt
  • 1 tablespoon yellow Thai curry paste
  • 1 red bell pepper, cut into 1-inch strips
  • 2 cups snow peas
  • 1 lime juiced
  • ½ cup cilantro
  • ½ cup peanuts
  • 2 stalks green onions, diced
  • Hot chili oil, to taste


In a large saucepan, over high heat, add to oats, coconut milk, salt, curry paste, red bell pepper, and snow peas.  Bring to a boil, then cover and reduce the heat to medium-low.  Cook for 10 minutes, stirring occasionally.

Serve and top with the lime juice, cilantro, peanuts, and green onions.  Add chili oil to taste.
