Chicken and Rice

Ingredients
- 2 tablespoons olive oil
- 1/2 yellow onion
- 8 oz mushrooms sliced
- 1 clove garlic minced
- 1/2 teaspoon thyme
- 1 pound boneless chicken breast cut into 1 inch pieces
- 1/2 cup white wine
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups uncooked instant rice
- 2 cups chicken broth
- 1/2 cup parmesan cheese
- 1/4 cup parsley chopped
Instructions
Heat oil in a large skillet over medium heat. Add the onion, and mushrooms and cook until onion is translucent. Add garlic, thyme, and chicken. Saute until the chicken is lightly brown, about 5 minutes. Add wine, salt, pepper, rice, and broth. Bring to a boil and reduce heat and simmer for 5 minutes. Add cheese and parsley and serve.
