COFFEE CHICKEN – September 29 – National Coffee Day and National Chicken Month

  • 1 tablespoon coffee grounds (optional)
  • 3 tablespoons brewed coffee
  • ¼ cup butter softened
  • 2 tablespoons molasses, brown sugar will also work
  • 1 clove garlic, minced
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 4 boneless chicken breasts


Preheat oven to 350.  In a small bowl, mix all of the ingredients, except the chicken.  Place the chicken breasts in a baking dish and drizzle the coffee mixture over the chicken.  Place the chicken in the oven and bake uncovered for 25-30 minutes. Verify it is done by using a meat thermometer at least 170 degrees Fahrenheit
