CHERRIES JUBILEE – September 24 – National Cherries Jubilee Day

  • 2 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon orange zest
  • 1/4 cup fresh squeezed orange juice
  • 1 pound cherries, washed and pitted (Fresh is best, frozen works also)
  • 1/4 cup brandy
  • 1 pint vanilla ice cream

In a bowl combine the sugar and cornstarch. I a skillet, over medium-high heat add the orange zest, orange juice, and sugar mixture. When it thickens add the cherries and stir them in. Turn off the stove and add the brandy. With a long lighter, or match held with tongs, light the mixture on fire to burn off the alcohol. Scoop the vanilla ice cream into dessert dishes and spoon the mixture over the ice cream.
