CRAB STUFFED FLOUNDER – February 18 – National Crab Stuffed Flounder Day

Serves 4

  • 1 cup panko breadcrumbs
  • 1 tablespoon cornstarch
  • 1 egg
  • 4 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/2 pound lump crabmeat, flaked
  • Cooking spray
  • 4 teaspoons butter
  • 1 lemon, cut into 4 wedges

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl add the breadcrumbs, cornstarch, egg, mayonnaise, yellow mustard, Worcestershire sauce, salt, and white pepper.  Mix well then add the crabmeat and carefully fold the crabmeat in.  
  3. Spray a glass baking dish with cooking spray.  Place 1/4 of the stuffing in each fillet, fold over and place in the baking dish folded side down.  Place 1 tablespoon of butter on each filet  
  4. Bake for 25-30 minutes.  
  5. Serve with the lemon wedges.
