GRAPEFRUIT CHICKEN WINGS OR LEGS – February 2 – National Grapefruit Month

Serves 4

Ingredients

  • 2-3 pounds chicken wings or legs
  • 2 grapefruit, one juiced and one the fruit removed
  • 2 garlic cloves, minced
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon powdered ginger
  • 2 tablespoons olive oil
  • Aluminum foil
  • Cooking spray

Instructions

  1. Place the chicken wings in a large bowl.  
  2. In a separate bowl combine the grapefruit juice, grapefruit fruit,  garlic, honey, salt, pepper, oregano, ginger, and olive oil.  Mix well and pour over the chicken wings.  Cover and place in the refrigerator for at least 1 hour.
  3. Preheat oven to 400 degrees Fahrenheit for wings, 425 degrees Fahrenheit for legs.
  4. Line a large baking sheet with the foil and lightly spray with the cooking spray.
  5. Place the wings on the baking sheet and reserve the marinade.
  6. Bake for 20 minutes and then remove from the oven.  Turn the wings or legs over and brush with the marinade.  Remove the grapefruit fruit from the marinade and place on the chicken. Bake for another 5-10 minutes for wings or 20-25 minutes for legs, until the chicken is done.
