PINEAPPLE RELISH

Ingredients

  • 1 20 ounce can of pineapple chunks, diced to ½ inch pieces (Reserve 2 tablespoons juice)
  • ½ yellow onion diced
  • ½ red bell pepper, diced
  • 2 cloves garlic, minced
  • ½ inch ginger, peeled and minced
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup brown sugar
  • ½ cup cider vinegar
  • 1 teaspoon lime juice

Instructions

  1. In a large saucepan over medium-high heat add the pineapple chunks, onion, bell pepper, garlic, ginger, salt, cinnamon, brown sugar, and vinegar.  Heat until it starts to boil, then reduce the heat to medium-low and simmer for 30 minutes, stirring occasionally.  Note
  2. Remove from the heat and add the pineapple juice and lime juice and toss.  Cover in the refrigerator until chilled.
