GRANDMA’S GINGER COOKIES – October 1 – National Homemade Cookie Day

Prep time: 10 minutes

Baking time: 12-15 minutes

Total time: 22-25 minutes

Ingredients:

  • 1 cup shortening
  • 1 cup sugar, plus extra to roll the cookies in
  • 1 egg, beaten
  • 4 tablespoons molasses
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon ginger
  • 2 cups flour
  • Cooking spray

Instructions:

Preheat oven to 350 degrees Fahrenheit In a large bowl, using a mixer, cream the shortening and sugar.  Add the egg and molasses and mix well.  Add the baking soda, cinnamon salt, ginger, and flour.  Mix well.  Roll into 1 inch balls, roll in sugar, and place on a cookie sheet sprayed with cooking spray.  Spray the bottom of a glass and press down on the balls.  Place the cookie sheet in the oven and bake for 12-15 minutes.
