Ingredients
- 1 6-8 ounce package of baby spinach, washed
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 2 tablespoons crunchy peanut butter
- 1 tablespoon yellow curry
- ¼ cup water
- 1 red apple, cored and diced
- 4 cooked panko chicken breast, cut into ½ inch strips
- ½ cup dry roasted peanuts
Instructions
- Place the washed spinach in a microwave-safe bowl and cook for 30 seconds.
- In a medium pan over medium heat add the soy sauce, hoisin sauce, brown sugar, peanut butter, yellow curry, water, and apple. Cook for 6-8 minutes, until the apple is soft and the liquid has been reduced by at least half.
- Serve with the wilted spinach, soy sauce mixture, chicken, and dry roasted peanuts.
