Ingredients

  • 1 6-8 ounce package of baby spinach, washed
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons crunchy peanut butter
  • 1 tablespoon yellow curry
  • ¼ cup water
  • 1 red apple, cored and diced
  • 4 cooked panko chicken breast, cut into ½ inch strips
  • ½ cup dry roasted peanuts

Instructions

  1. Place the washed spinach in a microwave-safe bowl and cook for 30 seconds.
  2. In a medium pan over medium heat add the soy sauce, hoisin sauce, brown sugar, peanut butter, yellow curry, water, and apple.  Cook for 6-8 minutes, until the apple is soft and the liquid has been reduced by at least half.
  3. Serve with the wilted spinach, soy sauce mixture, chicken, and dry roasted peanuts.
