FOURTH DAY OF CHRISTMAS – CHICKEN POT PIE – December 28 – Four Calling Birds

Ingredients

  • 2 medium chicken breasts
  • 1 tablespoon salt
  • 2 tablespoons olive oil
  • ½ yellow onion, diced
  • 2 large carrots, diced
  • 1 large potato, diced
  • 1/2 cup peas
  • ⅓ cup flour
  • ¼ teaspoon black pepper
  • 2 cups chicken broth
  • ½ cup half and half
  • 2 pie crusts, recipe here or buy refrigerated pie crust
  • 1 egg white, whipped

Instructions

  1. In a pot put the chicken breasts and salt, cover with water and bring to a boil.  Cook until the chicken is done, about 15 minutes.  When the chicken is done preheat the oven to 425 degrees Fahrenheit.  
  2. In a separate pan heat the olive oil over medium heat.  Add the onion, carrots, and potato.  When the onion is just starting to become translucent add the peas, flour, and pepper.  Stir for 30 seconds and then add the chicken broth.  Slowly heat the half and half in a separate pan or the microwave. When the half and half is the same temperature as the onion mixture add.  
  3. When the chicken is cool enough to work with dice the chicken and add to the pan and stir together.  Place one pie crust in an oven safe 2-quart pan then add the chicken mixture.  Roll out the second pie crust, using a cookie cutter cut out the center.  Then flour the rolling pin and roll the crust onto the rolling pin, adding flour as needed, and unroll on the top of the baking dish.  Cut off any excess then press the edges together with a fork. Roll out the remaining dough and cut an additional 3 pieces with the cookie cutter.  Brush the egg white on the top of the crust then place the cutout dough pieces on top, then brush them with the egg whites.  Place in the oven and bake for 35-40 minutes, until the crust is golden brown.  NOTE: If your oven doesn’t bake evenly, turn the baking dish at 25 minutes.
