FRENCH FRIED SHRIMP – December 21 – National French Fried Shrimp Day

Serves 4

    • 2 eggs
    • 1 teaspoon salt
    • 1/2 cup flour
    • ½ teaspoon baking powder
    • 1/2 cup panko breadcrumbs
    • vegetable oil for frying
    • 1 pound shrimp, peeled and deveined, tails left intact
  • Cocktail sauce, optional

    1. In a small bowl add the eggs and salt.  Using a fork mix until the eggs are beaten.
    1. In a medium bowl combine the flour, baking powder, and breadcrumbs
    1. Frying:
        1. If pan frying place ½ cup of oil in a skillet over high heat.  
      1. If deep frying put 1-2 inches of oil in a large pot over high heat.
    1. Dip each shrimp in the egg mixture, then the flour mixture.
        1. If pan frying place the shrimp in the oil until the first side is golden brown, turn and cook until the second side is golden brown.
      1. If deep frying carefully place the shrimp in the oil and fry until golden brown.
  1. Serve
