SLOW-COOKER CHICKEN MOLE – December 13 – National Cocoa Day

Ingredients

  • 1 yellow onion, chopped
  • ½ cup raisins
  • 2 cloves garlic, diced
  • 1 chipotle chile, seeded and chopped
  • 1 28 ounce can crushed tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon cumin
  • ¼ teaspoon coriander
  • ⅛ teaspoon nutmeg
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup unsweetened cocoa powder
  • ½ pound boneless skinless chicken breasts, cut into 1-2 inch strips
  • ½ pound boneless skinless chicken thighs
  • White rice

Instructions

  1. Place all of the ingredients, except chicken, in the slow-cooker and stir.
  2. Place the chicken in the sauce
  3. Cook on high 4 hours, until the chicken is cooked and tender.
  4. Serve with rice
