“FLING” MEATLOAF – NOVEMBER 15 – NATIONAL CLEAN OUT YOUR REFRIGERATOR DAY
Every time we make meatloaf it is a bit different. This is the perfect recipe for National Clean Out Your Refrigerator Day. Your celery is getting a bit wilted, perfect. Rice from last nights dinner? Throw it in.

Ingredients
- 1 pound ground beef
- 1 egg
- 1 medium onion, chopped
- ⅓ cup milk, half and half, heavy cream (Whatever you have in the refrigerator)
- 2 carrots, chopped
- 1 clove garlic, minced
- ½ cup chili sauce
- Misc leftovers
- ½ pound bacon
- Salt to taste
- Pepper to taste
Instructions
- This recipe “flings” your leftovers into a meatloaf. Preheat oven to 375 degrees Fahrenheit. In a large mixing bowl add the ground beef, egg, onion, milk, carrots, garlic, chili sauce(I use “Homemade Chili Sauce”). Mix together.
- Go to your fridge and look for different leftovers or foods that need to be used. Examples:
– Baked or mashed potatoes
– Uncooked pork chops, steak, or chicken
– Vegetables i.e. celery, green beans, bell pepper, tomatoes, parsnips, Brussel sprouts, eggplant, zucchini, etc.
– Leftovers - Place all of the items you found in a food processor and pulse until well mixed, then add to the mixing bowl. Mix everything together. Place in a glass bread pan or large casserole dish. Top with the bacon. Bake for 45-60 minutes, until done. Drain excess grease. Serve with salt and black pepper
