GRANDMA’S MINCEMEAT PRIZE COOKIES – November 26 – National Mincemeat Day

Makes 48 3” cookies

Ingredients:

  • 1 cup shortening
  • 1 ½ cup sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 3 eggs well beaten
  • 3 ½ cups sifted flour
  • 1 9 oz package of mincemeat
  • Cooking spray

Instructions:

Preheat the oven to 400 degrees Fahrenheit.

In a mixer add the shortening and sugar.  Beat until smooth, about 2 minutes.  Add the salt, baking soda, and eggs.  Beat until mixed, about 1 minute.  Slowly add the flour.  When mixed add the mincemeat and using a large spoon mix together.

Spray a cookie sheet with cooking spray.  Drop 1 tablespoon of dough onto the cookie sheet, 2 inches apart.  Bake for 12 minutes.  Repeat with the remaining dough.
