PORK CHOPS AND APPLESAUCE – October  7 – National Pork Month & National Apple Month

Serves 4

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ¼ cup chopped yellow onion
  • 1 red apple, peeled, cored, and sliced into ¼ inch thick slices
  • 4 boneless pork chops ½ inch-thick
  • 1 1/2 cup applesauce
  • 3 tablespoons brown sugar
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon salt
  • ¼ teaspoon white pepper

Instructions:

Preheat oven to 375 degrees Fahrenheit.  In a pan over medium heat add the olive oil and butter.  When the butter melts add the onion and apple slices.  Cook for 5 minutes then remove the onion and apple and place in a bowl.  Place the pork chops in the same pan and cook the pork chops until they are browned on both sides.  About 3-5 minutes per side.  In a bowl mix the applesauce, brown sugar, allspice, cinnamon, salt and, pepper.  Place the pork chops in a baking dish.  Pour the applesauce mixture over the pork chops and spoon the onion/apple mixture over the top.  Cover with foil and bake for 30 minutes.  Remove the foil and bake another 15-20 minutes, until the pork chops are no longer pink in the center.  To be safe use an instant-read thermometer.  The center of the pork chops should be at least 145 degrees Fahrenheit.
