SPAETZLE DUMPLINGS

Serves 4

Ingredients:

  • 2 quarts water
  • 1 tablespoon olive oil
  • 2 cups flour
  • 4 eggs, lightly beaten
  • ⅓ cup milk
  • 1 tablespoon salt
  • Cooking spray
  • 1 tablespoon butter, melted

Instructions:

In a large saucepan add the water and oil and bring to a boil.  In a large bowl add the flour, eggs, milk, and salt.  Stir until smooth, dough will have a thick consistency.  Spray a colander or spaetzle maker with cooking spray and place over the boiling water.  Place some of the dough into the colander or spaetzle maker.  If using the colander use a wooden spoon to press the dough into the boiling water.  If using a spaetzle maker follow the instructions that came with it.  Leave the pieces in the boiling water until the dumplings are tender and float which will be about 2-3 minutes.  Remove with a slotted spoon, toss with the butter.
