FRIED SCALLOPS – October 2 – National Fried Scallops Day

Ingredients:

  • 2 cups vegetable oil, for deep frying
  • 3 eggs
  • 1 1/2 cups panko breadcrumbs
  • 1 cup cornmeal
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • 2 pounds sea scallops, if large cut in half or thirds
  • 1 cup tartar sauce

Instructions:

In a skillet over high heat, add the oil. In a bowl, whisk the eggs.  In a separate bowl add the breadcrumbs, cornmeal, salt and baking powder, mix together.  Wash the scallops and pat dry with a paper towel.  Dip the scallops in the breadcrumb mixture, then dip in the eggs, then dip again in the breadcrumb mixture.  Place the dipped scallops in the oil and deep fry for 2-3 minutes, or until golden brown.  Cut the largest one open and make sure it is white in the middle  Place the scallops on a plate covered with paper towels.  Serve with tartar sauce.
