BEEF, BACON, AND BEER CHILI – September 28 – National Drink Beer Day

Serves 4

Ingredients

  • 2 tablespoons olive oil
  • 6 slices of bacon
  • 1 medium onion diced
  • 1 1/2 pound ground beef
  • 1/2 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon yellow mustard
  • 2 cloves garlic minced
  • 2 14.5 oz cans peeled whole tomatoes
  • 4 cups chicken broth
  • 2 cups stout beer
  • 2 cups brewed coffee
  • 2 15 oz cans pinto beans drained
  • 1/2 cup crushed tortilla chips
  • 4 tablespoons sour cream
  • 1/4 cup cilantro chopped

Instructions

In a medium pan add the olive oil and bacon and cook over medium heat until the bacon is crispy.  Remove the bacon and add the onion.  Cook for 3 minutes and add ground beef.  Cook until the beef is done.  Add the coriander, cumin, mustard, garlic, tomatoes, chicken broth, beer, coffee, and beans.  When the mixture is hot serve over 1/8 cup crushed tortilla chips and top with sour cream and cilantro.
