Ingredients
- ⅓ cup packed brown sugar
- ½ teaspoon salt
- ½ cup unsalted butter, room temperature
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¾ cup pecans plus 12 additional whole pecans, set aside
- Sugar for rolling
Instructions:
Preheat oven to 375 degrees. Using an electric mixer add brown sugar and salt. Mix about 1 minute. Add butter, egg, and vanilla extract mix until blended. Slowly add the flour, scrape down the sides as needed. Chop the ¾ cup of pecans and hand fold them in the dough. Separate the dough into 12 pieces and roll in sugar. Place the balls 2-3 inches apart on a baking sheet. Flatten the balls with the bottom of a glass. Press a whole pecan into the top of dough. Bake 10 -13 minutes until lightly colored. Place the cookies on a wire rack to cool.
