BLACK BEAN AND RICE BURRITOS – September 20  – National Rice Month

Ingredients

  • 1 cup instant brown rice
  • 1 cup water
  • 1 tablespoon olive oil
  • ½ yellow onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon chili powder, or more to taste
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 15 oz can black beans, drained
  • 1 8 oz can tomato sauce
  • 4 large flour tortillas

In a small pan bring the rice and water to a boil.  Turn off heat and cover.  In a medium-sized pan heat the oil over medium heat and add the onion.  When the onion is translucent add the garlic, chili powder, paprika, black pepper, beans, tomato sauce and rice.  Stir together and remove from heat.  Fill each tortilla with ¼ of the mixture.
