Ingredients
- 2 tablespoons olive oil
- 1 yellow onion chopped
- 2 tablespoons grated garlic
- 1 tablespoon, about 1 inch, fresh ginger
- 1 teaspoon paprika
- 2 pounds chicken breast cut into 1-inch pieces
- 1/2 cup Greek yogurt
- 1 cup papaya cut into 1/2 inch pieces
- 4 cups cooked rice
Place a large skillet over medium heat. Add oil and onion. Cook until onion is translucent. Add garlic, ginger, paprika, and chicken. Cook until the chicken is nearly done, about 10 minutes. Add the yogurt and stir for 2 minutes. Then add the papaya. Serve over rice.
