- 1 tablespoon butter
- 4 boneless pork chops, pounded with a mallet to ⅓ inch thickness, cut into ½ inch slices
- ½ cup apricot preserves
- 1 garlic clove, minced
- ¼ inch fresh ginger, peeled and minced
- ¼ teaspoon Dijon mustard
- Cooked whole grain rice

- In a large skillet over medium-high heat add the olive oil and butter. When the butter has melted place the pork chop slices and brown on each side. Remove the pork and set on a plate
- Add the apricot preserves, garlic, ginger, and dijon mustard. Cook for 2 minutes.
- Add the pork chop strips back into the pan and reduce the heat to medium-low and cover. Stirring occasionally until the pork is done, about 5-7 minutes.
- Serve with whole grain rice.
